1/4 Cup Olive Oil
1/4 Cup Rice Wine Vinegar
1 TBSP finely grated Ginger
2 TSP Sugar
3/4 TSP Red Pepper Flakes
Kosher Salt
2 Large Cucumbers, halved lengthwise, seeded and sliced
1/2 LB Bell Peppers, sliced
1/2 Red Onion, chopped, or cut into half rings
1/3 Cup torn Basil
Combine oil, vinegar, ginger, sugar, and pepper flakes in a bowl. Season with salt.
Add cucumbers, onion, basil, and toss to combine. Chill 15 minutes.
